I’ve just got off the phone with the Fort De Soto campground and boat ramp folks. They stated there is no long term overnight RV parking at the boat ramp or anywhere else in the park, just a heads up as that was my plan.

That is correct. However, you might be able to get a campsite. They are probably full now, but you could give it a try.
You can park your car with or without a trailer while boating/camping/WaterTribing overnight for several nights. But you have to pay for as many days as you need. I have an annual pass for my car and my trailer. My car and empty trailer will be there for the duration of the EC2025.
Having said that, if you were "camping" in your RV, it would not be allowed even if you paid for one or more days.
